I’ll chime in, even though i guess i’m cheating a little bit, since i worked in clubs on Bourbon for a while.. some of the celebs i can remember off top of my head were:

Jerry Springer
Ronnie Lott
Terry Bradshaw
Marcus Allen
Cuba Gooding

The ones i actually hung out with and got to know a little were:

Warren Moon
Mario Lopez
The guy who played Kevin’s brother on Wonder Yrs

The best, most awe-inspiring:

Joe Freaking Montana

And the one i barely missed seeing since it was so busy I didn’t realize he was there, was Paul McCartney.. still bummed about that one til this day.

That is a tough question. Liam Nelson has a villa on Saint Martin and he use to frequent the Platinum Room from time to time. Of course the place was owned by the Russian mob but I do not know if he counts as famous, but he was a hell of host as long as you paid your tab at the end of the night.
