The mental gymnastics that people will go through in order to justify not paying someone because it's discretionary is astonishing. They know what is customary, they know how it all works, yet they still go to restaurants and screw over the person serving them because of some beef with the "system". Jesus.

To be completely honest, I always thought 20% was the baseline.

Not difficult work, but it’s not exactly easy, especially the more expensive the place gets.
A place like chili’s? Just running the same shitty food back and forth, grabbing ketchup for some rednecks well done steak, etc. It’s more just physical work.
Upper echelon steak houses and the like will require in depth menu and ingredient knowledge, Wine and spirits knowledge if not a somm 1 certification, etc.
Is it brain surgery? No. It is still a shite ton of work, especially during peak hours? Yes.

I always heard that but when I waited tables in New Orleans I was never under-tipped by a black table. Granted I only waited on a handful. The restaurant I worked at was sort of high end.

I tip 20 percent unless there is just a huge problem. I thought most did. This thread proves me wrong.

Nobody has moved the "goalppast" or baseline. The standard is 15 to 20 percent.

But if you’re broke and can’t afford to tip, you shouldn’t go out. If you can only afford 80% of what the total cost is going to be, you should stay home.

20% minimum from me unless the service was atrocious, then it’s 15. I can count on half a hand how many times I’ve done that. Well maybe 3/5 of a hand.

That’s just for 1-2 hours for the lunch rush. If they made $40 an hour for the full 8 hour shift, everyone would want to work there.

Meaning if you're tipping 15-20 (under 20), it's "frowned upon."
As you said 15-20 used to be the norm, this states otherwise.
