I'm single, and I live paycheck to paycheck on way more than that. I'd have to make major changes if I were to consider 35K per year.

Maybe it's just my lack of frugality, but I can't imagine living on less than 35K in a major city. Maybe in Bumfrick, but a city I don't find living on that salary to be feasible for a comfortable quality of life.

I rent a decent house with 2 roommates, I make about 30k a year, and I have enough money to buy almost anything I want.

$750/mo for a house note? Where? Does this include insurance and taxes?
How about money for maintaining the house/condo? Does nothing break, ever? Yard maintenance? Condo fees or HOA fees?
$200 "misc bills" will get you cell phone, water, sewer, garbage, and plus misc bills. Maybe.
I couldn't help but notice that you left out transportation costs.
Not everyone's parents pay for their vehicles.
$200 savings = gas money.
$300 play money = car note.
Oh, but you still have to pay for auto insurance, maintenance (tires, oil, brakes, etc) and incidentals and when shite breaks.
As for your "plenty of money left over for food and gas", you'll see all that food and extra shite you buy adds up quick. A single guy will spend well over $300 on food unless he's eating shite every day. Then there's clothes, cleaning products, hygiene, more incidentals, household goods, electronics, etc.
There goes your whole budget and even though you still haven't paid for medical copays, dental cleanings, or student loans, you still are too broke to take a vacation or to buy anything nice.
