I have the same Ninja. I like it and it gets a lot of use. Bunn does make some nice ones as well.
I also use a toddy for cold brew. I have a coffee problem.

I bought one last year...problem is that the coffee smelled/tasted like rubber. I ran water through it about a dozen times but the smell persists...have had it stowed away in a cabinet since then. Been using the damn Keurig

And Keurig tastes like plastic to me....
I like the Jura for a single cup or my grandmother's old percolator for a whole pot.

It's all a factor of temperature, right?
Bunn coffee makers are the drip coffee gold standard. This is because they brew at less than boiling temp and hence make a smoother less acid coffee product.
A yr or 2 ago my wife and I were in the same boat you are. Did a little basic research and found that the Hamilton Beach brand also brews at below boiling temp. There are only a couple brands that brew like this. We tried a Keurig and it was not good. Been pretty happy with the HB.

I have that exact same Bunn at home as well. I wish I would have spent a little more and got one that you can have a water line connected to. As far as an insulated stainless carafe, you can probably order one that fits exactly for it.
