If Prigozhin wins, he'll need the full Russian military to firmly establish control in Russia and prevent the inevitable uprisings. Chechnya will almost certainly revolt, and they won't be the only ones. Tuva (Shoigu's birthplace) would be another.
There's absolutely zero chance that Russia could simply have a coup and life would continue as before.

I believe Prigozhin has said, within the last 24 hours, that the reasons for invading Ukraine were contrived.I'm running on little sleep so I may be mistaken though.

Right. And an announcement of an immediate end of the war would help Prigozhin establish international legitimacy. Lots of people around the world would thank Prigozhin for ending the war and bringing peace to that part of the world.
And he would need international legitimacy to establish his rule.
Yes, as I said, a Prigozhin victory is also likely an immediate Ukrainian victory.

As wild of a dude as Prigozhin is, I wonder if the West would rather him in power than Putin. I have a hard time imagining that he would wield the same power and influence that Putin has. Would Xi Jinping have a working relationship with him? Turkey?

He released a video earlier this week saying the entire Russian justification for the war was a lie. I'll try to find it, but twitter is moving so fast it's going to be deeply buried at this point.
