Maybe I'm crazy, but that jambalaya is way too mushy for my tastes. Way too much water put in. I like my jambalaya rice to be firm, but not mushy.

Also, I put in more onion, less of the green stuff, and cook them down until ALL the water is cooked out of them. And use homemade chicken stock, from boiling the meat off the chicken bones, then boiling the marrow out of the bones for the stock. Better than water and bullion cubes, imo.

Just my thoughts, guy looks like he's a helluva cook and gonna try some of his other recipes.

Seems like a super douche. The videos I have seen were basically the same recipes my family has always cooked with. I guess it's cool for people outside of the area but most people already use those aside from a variation or two.

None of his recipes are anything special.

It’s the same recipes my parents and grandparents taught to me.

He’s a pretty good dude. Definitely not douchey in person. The accent on the show is a little forced, but he’s always had that slight down da bayou accent.
