If I'm immortal with eternal youth, I would spend my first 100 years or so in academia, learning everything I could. I would become a professor, which would mean nearly endless time for research and an endless supply of hot, impressionable, coeds. 
Then, I would begin sowing the seeds of revolt to make myself dictator for life (an eternal life) and eventually take over the world! Muahahahahahaha

I would foster the welfare of my legacy on daily basis. Then try to help make the world better somehow. If I was immortal, I could be used for human testing in things. But not sure how immortality works. Would I break and then regenerate if I was a cancer test patient?

Well you caught me in time, I'm not in to terrible shape to lock it in. I'm assuming this is a no age anymore stay the same can't die type scenario. I would do a lot of skydiving, motorcycle riding x-game type stuff that I'm afraid I'll kill myself doing now at my age. If my chute doesn't deploy I can just get up and move on.
