There are 3 schools of thought:

Kansas
France
North China

A lot of scholarly work linking it to China has been done over the past 30 years. China, has of course, fought back on that idea with considerable effort.

We will never know for sure.

I acknowledge that most of them likely originated in China. I’m saying you are making definite conclusions based off of limited evidence especially with regards to the Spanish Flu.

Does it really surprise you that the country with the largest population is where many plagues and epidemics originate?

In the cities there people are on top of each other. Its the perfect environment for shite to spread.
