Hypo: If you owned a restaurant what would you do to target the best clientele?

Would you:
Have Higher prices?
Not serve/only serve certain items?
Dress code?
No cell phone policy?
Certain kinds of music?

What do you do above the basics to ensure that your servers and your best customers are happy?

Seeing as how Willie's not caving to a certain Gravy enthusiast isn't going to hurt and likely will help their business, what policies would you enact in order to lure the type of customer you wanted?

Hire extremely attractive waiters and waitresses and have them dress provocatively (shirtless guy, girl in tiny shorts and crop tops, etc)

Lots of fine dining restaurants have a waiter/waitress but then that waiter/waitress also has an assistant on standby to refill your drinks and address any concerns/questions you have.

Provide top quality food that will cost more than your average restaurant and create an atmosphere that will attract only people who know how to act in public... for the most part.

I professional wait staff. There's a local chain of restaurants here called Great American Restaurants and their wait staff is superb. The food is fantastic as well but the knowledge and professionalism of the staff adds that extra touch.
