I claim to know next to nothing about meteorology. However, everything I'm reading seems to indicate conditions in the Gulf would be prime for rapid intensification if she got that far

I know one thing for certain and that is driving on the Overseas Hwy the next three days will absolutely suck on that two lane highway through the Keys

I know it would never happen but I wish at some point the cruise lines would cancel the week and book passage to evacuate to an unaffected port. You're on your own to get home but at least one idiot running out of gas on 7 mile bridge wouldn't endanger the folks leaving the southern keys.

I haven't seen a single model take it farthwe west than Key West, but you couldn't tell that based on this thread.
I understand people are gun shy, but there is no discernable threat to a state west of Florida at the moment. Hell, the Carolinas and Virginia have far more to worry about than Alabama, Mississippi, LA, etc.

With no shear the water in front of Irma for the foreseeable future has plenty of heat to fuel a Cat 4 or better storm.
Oh and you're right not to trust the models past five days. The possibility range from out to sea to getting into the gulf. Until it's far more certain we have a gulf storm, don't fret too much.
