If I knew that I was going to Alaska beforehand, then I would take a Samurai Katana that measured 3.5 feet from the hilt, to the blade.
If I were you and I were going to Alaska and knew an encounter with a Grizzly was a definite possibility, I would get over my dislike of guns and carry more with me.

Yeah being alive while a grizzly is tearing the flesh from your body is definitely something to avoid at all costs.

Planned a trip to Yellowstone last summer and did some research on Grizzlies. Even with bear spray and guns it can take a lot of work to drop one that is hell-bent on killing you.
After reading up on a lot of encounters the smallest gun I'd feel comfortable with is a .44 mag.
.44 mag, SW .500, or 12 guage tactical with slugs or big shot.
Without guns I'd be making lots of sturdy spears like punji sticks but there aren't many options to use them. Dig pits around your hut? Stick the butt end of the spear into the base of a tree and let the bear charge into it as it attacks you and aim for the throat? I'm still going to die 9/10 times.
Watch this video of 2 grizzlies fighting off you think you're doing anything to them with a knife or a sword.

Yell at it and try to swing a melee weapon with reach as menacingly as a puny human can manage against a bear. You don’t ever realistically win this fight, but with a sufficiently worrying threat display, you might convince the bear that it’s not worth the injuries it would suffer in killing you.
It’s obviously a bluff, but you don’t have any other choice in this scenario. Unless you’re a ridiculous badass you’re not winning this fight.
