They will. Also, you can bring the biggest bottle of mouthwash you can find if you check your bag. The size limits only apply to carry-on.
Perhaps there is an official limit even for checked bags, but it must be more than 6 gallons in my experience.

hell some people bring suitcases just for beer when they go on trips

I've had my bag searched with the little paper left in it. They even rolled the bottles back perfectly and nothing broke.

I've never heard of someone taking beer from Dallas to Asheville - a place that has probably the highest concentrations of breweries in the country.
