Weird, but okay even with this the case, that doesn't change anything about you parking at the AirBnb or not. I assume you don't plan on driving drunk around town all weekend...?
Park your truck somewhere safe like a nice hotel or paid garage, Uber/walk to your AirBnb, get your car when it's time to go home.
Your truck being at the AirBnb doesn't change the walking/Uber situation unless you plan to trying to drive your truck around the city sober for a bunch of drunks. Which is better than driving drunk yourself, but still would be a massive pain in the arse for you (parking, narrow streets, etc).

Trucks are being targeting for sure. My advice: park it in a garage at a hotel or using Premium Parking app, and Uber/Lyft around.

I'd go a little further out. Park it in Ochsner main campus garage, and uber from there.

We parked my gf's car at my buddy's house on Cleveland right off of Carrolton for 4 days two weekends ago and no one bothered our car. My buddy didn't seemed too concerned about their cars. Closer to downtown I would take measures though.

Not necessary, IMO. But I would recommend a parking garage on Poydras rather than anything around Canal.
Several good ones. Hancock Whitney, 930 Poydras, Pan Am Center, etc.

I suggested it because it's roughly 15-20 minutes from where OP is staying, and free.

If you’re really that worried about it, park the truck in valet with a hotel, then just Uber or walk wherever you need to go to New Orleans
Dependent on where the BNB is at on Esplanade, you might not be able to find nearby street parking anyways
