My dad was a meat market manager and butcher before he went to the FDA. Never forget the smell of a meat market. Good clean smell. I worked in the grocery business through most of college and never met a happy butcher, they were all mean as crap. But thats just my experience.

Just catch a side gig at a big grocer, Bill. They are always looking for employees. Apply specifically to be a butcher trainee.

Don't take Quaaludes while using a butcher's bandsaw will be a good start. My friend's thumb almost ended up in somebody's hamburger.

I started as an apprentice in a fresh meat department at a co-op that does whole animal butchering. Now I can break down any animal. It takes time, but if you are eager, you can be taught. You’re gonna have to start at the bottom regardless

Don't know if there is a school but you might consider trying to get a job in a butcher shop or meat processing plant.
