Give him tasks you know he will fail at then base your firing off of that. While not perfect, if he's seeing that he failed as why he's being let go then that's likely to be more palatable to him than "you're batshit crazy".

I think running a business and being profitable is a strength different from hiring and evaluating personnel.

In fact, I'd reckon that running a business is such a daunting venture there needs to be a balance of caution with delusional optimism that everything will work out. That doesn't lend itself well to hiring, where everyone that comes through the door needs to be guilty until proven innocent.

I personally think it's a crazy dumb thing to do, but OP seems like a good guy who is expecting the best out of folks and giving them the benefit of the doubt.

I know people who are very sharp and have success who are almost delusional about things working out in their favor. Maybe OP is that person.
