I like watches but those are hit or miss. Some guys like them, some forget them. As I get older my nice ones are worn less and I wear a Seiko diver mostly that I can see in the dark and beat up.
Back to graduation present - mabye a nice pair of really well made shoes/boots. Alden 403, Danner Lights, Redwing Iron Ranger, etc... Maybe involve him in the purchase process as a good pair of boots will last for decades and size + style are very subjective.

My uncle gave me a tool set when I graduated high school in 2000. I've added a lot of other tools since, but I still have it and use them today.
Also, as someone who lost his dad at a pretty young age as well, make sure he knows that you know you are the man in his life and that you are proud of him and proud to be the man in his life. That way he will know he's not going out into the world all on his own.

Get something practical that he can use for many years. I only remember 1 gift from graduation. I still have it today. A well made Men's manicure set. Clipper, file, and all the other stuff with it. Still going strong over 40 plus years. Don't even remember what my parents gave me. If you're the only man in his life ignore your wife and think about what you would like to have today and buy a good one of that item.

My son had a junior ring ceremony and I bought him a set of new clubs. Really wanted to get him a Tag but this generation just wants electronics and short lived stuff.

Having spilled blood, sweat and tears on the campus I know first-hand that he'd benefit from a bike. The campus is massive.

Custom engraved pen. I got one as a gift when I was a senior in high school from a role model. He selected Purple Heart wood because I was going to LSU. I still have it. I used it all through college before letting it live in my office where I don’t reach for it often but know that it’s there.
These can range from down in the $30 range to several hundred dollars. I would suggest ballpoint or rollerball (I tend to prefer rollerball) rather than a fountain pen, which seems antiquated and like an ornament if you’re not “in” to it. Parker, Cross, and Montblanc are all options with all the types.
I’m with you on the watch, but I don’t think she’s wrong either. Sort of like a fountain pen, for some folks it is THE gift. For others, it could be just another thing.
For someone who sounds fairly studious and like someone who’s going to work at a desk, a pen that’s useful, ornamental, and sentimental sounds like a decent choice. It would be near the top of my list to give, at least.
