There was some hope that we could eradicate COVID-19 through high vaccination numbers but that’s likely not to happen as long as the virus has viable hosts to mutate and vaccination rates stay on the lower end compared to something like polio.

I agree with that bur there are a few issues to it.
Many in power shut down access to it and Hydroxychloroquine for Covid use early on. Remember?
The other issue is a lot of Doctors see it as old school farm medicine/home remedy that is beneath them so they refuse to use it.
Other Doctors have made it up in their mind, that even if someone is dying, it is ineffective and there is no use in trying it.
Not many know where to find it and many truly think it's only a cattle medication and have no idea it is an actual medication for human consumption originally.
What that does is force people into seeking alternative means of using it.

I always tell my employees to worry about what's within our 4 walls and I needed to take my own advice. I will still share my opinions and interesting data, though.

I credit that to the large number of kids who were virtual during typical flu season and people actually staying home from work sick. And people upping their hygiene regimes.
We also saw far less mono in schools as well.

To speak to the question about efficacy. The vaccine and immunity for that matter is not an all or none proposition. It is a numbers game - its the number of viral particle circulating vs the number of neutralizing antibodies circulating. With this variant and the number of people infected, the number of circulating viral copies in an individual and in the community at large is overwhelming. Immunity is not simply a binary situation, but rather a sliding scale. MMR is a good example of a vaccine that in some produces very long-lasting immunity, where in others functional immunity is of a much shorter duration. Because of how long the vaccine has been around "immunity" can be quantified with antibody titers (with respect to Rubeola and Rubella at least, with mumps it is not so clear).
It may be that one single booster increases antibodies to a high enough level to do the trick and even prevent mild to moderate disease in almost everyone and for a long time, or it may be that boosters are needed periodically - there is truly no way to know that at this stage of the game, but the vaccine(s) are unquestionably beneficial at this time. And I'm not so sure why so many people would be so bent out of shape for periodic boosters when many vaccines require such already.
The gold mine is going to be something that stimulates a neutralizing mucosal antibody (IgA) that can be produced in high enough quantities at the points of entry for the virus (particularly the nasopharynx).
