For their personal use? Unethical and the laws need to change. Those inmate feeding funds are tax dollars, not bonuses.

I live in Etowah county in a little town called Southside, Al. This has made a lot of people very happy in our little corner of Alabama. I doubt anything will come of it. Oh well we know they are all crooks anyway!!

One of the constitutional amendments in 2016 was about moving the Etowah Co. Sheriff employees to their own pay system, so they could get raises without every county employee getting one.
"Amendment 7 was designed to place the employees of the Etowah County Sheriff's office under the authority and supervision of the Personnel Board of the office instead of the county. This move allowed Etowah County sheriff's deputies to receive raises without having to concurrently give similar raises to all county employees."

Looks like it worked.
(I know they are not related. I'm just joking about how screwed up the Alabama Constitution is that county personnel policy decisions can require constitutional amendments.)

Aren't some LA Sheriff's doing a similar thing? They get paid $24 and change per head each day they house a state prisoner. They provide three very basic meals, zero rehabilitation programs and warehouse the inmates in parish jails. They keep the difference between the $24 and what they actually spend. I'm almost positive that it used to go in their pocket or campaign warchest. They may have to put it towards their budget these days.
