I am going to see what I can do to get them to agree to a GFM. They aren't the type to ask or anything is why I think she will be against it. Just your classic old hard working keep to yourself people.

For the lady I don't have much. I'd say get one of the cheap wooden caskets that the Monks made but sounds like the state of LA has made sure they are expensive enough so the funeral homes can compete.
What does a cheap funeral cost? When we buried an elderly family member a few years ago it seems like it was 8k. And that was with the plot already bought.

My dads funeral was 8k in 2010.Im sure they are more now. The funeral homes prey on your emotions. I can remember it all to this day. They told my mom how much it would honor my dad to have this special book to sign for a $125. Then it's a special this and a special that. At the end they sent us to the finance guy to settle up . My dad had a decent life insurance policy but it was thanksgiving day so the agent wasn't available. They asked if she had the money now. She did not. They told her that they couldn't help her. My wife and I put it on a CC.

I know of a lady in her 90's that donated her body to science. From what I understand once they are "finished" they cremate the remains and send them to a family member.

That is horrible. I assume their grandchild is nowhere to be found or spent everything he/she took from them.
Cremation is cheaper right? Maybe that is an option in terms of lowering the cost. Have them cremated then have a ceremony afterwards. It is a shame how much it cost to die. I am going to donate my body to science.
But as for as their policy, I never heard of someone buying a policy and it is only as good as the amount they paid for it. My parents bought their policy and had everything paid for when they first got married and when my dad passed away, everything but the cost of having the funeral at the funeral home, was paid for. They were married 25-26 years when my dad passed and there was no issue with it only being worth what they paid for it at the time.
What about going ask local businesses to see if they can help chip in possibly?

my dad wanted to be cream mated when he passed . it was around 1500 for death certificates and such. we bought a book online to have people sign at the memorial at a local church . then came the flood no memorial.
