NCL out of New Orleans is legit!
This is the same itenarary out of New Orleans, and they are all great ports. I went diving in Roatan (Honduras) at Turquoise Bay while my family hung out at the beach there. It was great day.
Check out NCL's offer this month. On a lot of cruise dates, THEY HAVE AN OPEN BAR for the duration of the cruise. We've already booked for next January and the following January as well. 4 of us in an oceanview cabin with an open bar all week for 1800 bucks. Hard to beat.

We got some on board credit and free upgrade on room. We bought 2 drink packages for the week. It's me and the SO. I'm looking forward to it (first cruise). I'm pretty sure I'll enjoy the ship time but wondering what to choose to do while at port

Cruised on the Dream out of Ft. Lauderdale before it came to NOLA. Nice ship. We always cruise out of Florida because the ships are larger and more cruise line options. Cruised on both Carnival and Royal Caribbean several times. I prefer Royal Caribbean over Carnival . Our next cruise is on the Independence of the Seas. More activities for teens.

chankanaab park in Coz is pretty good. They've got a good swim with dolphin program. There are a lot of good beach clubs in Coz as well.
We went cave tubing one year and last year went to banana bank horse ranch in Belize. They were both pretty cool.
In Roatan, Tabyana is a nice beach (anywhere west end is a nice beach). Turquoise beach is the middle of roatan north shore is out of the way and was a lot of fun too. I was diving and saw a spotted eagle ray, scorpion fish, toadfish, lionfish, eels, etc. The snorklers saw eagle rays as well.
In Costa Maya there is lots of bars along the beach. It's a nice beach and really laid back. They offer a lot of exucrsions (dune buggys, Mayan ruins, etc) as well as a nice beach.
Check out cruisecritic dot com. They have a lot of reviews of ports and excursions.

I heard on the radio earlier that Viking Cruises has chosen New Orleans as their first US port. Will start cruises in 2016.
I believe Viking is nicer than Carnival and Royal Caribbean.

I have to say by far the best experience was with Little French Key. This guy basically owned a private island with animals and decided to start letting people come. As it got more popular he added bars and grills. It's the most beautiful water I have seen. You literally put on snorkel gear and you are on a reef. The shelf itself is only thirty feet off. They give you kayaks and paddle boards to use and snorkel gear.
My fiance and the girls swam with the Jaguar, which was an extra $35 but they loved it.
It is $55 for transportation to the pier and then to the island by boat. That includes access to grounds, but all food and drinks are a la carte.
For $88 you get the ride, access and a meal and two drinks (any kind including specialty) and use of kayaks, paddle boards, snorkel gear. For $98 you add on a boat trip to a reef to snorkel.
An extra $25 adds on riding the horses in the water, and $35 adds on swimming with the Jaguar. (really just a photo op)
Heavily recommend this place. They only allow a set number.
These are pics I took last Thursday. I'm looking into going back out there, they have houses for rent for $105 a day on the water.

In Cozumel it's a mixed bag for me. There is a lot to do. If you want a nice relaxing day at the Beach, I like Nachi Cochum, they only let 100 people in a day. All food and drinks included. It's $50 adults and $30 for kids.
(you have to get there - $17 cab ride each way)
For a similar (right next door) beach, but a wilder time, there is Mr. Sancho's.
I personally like to rent a Jepp and drive around the island. This last time we did Nachi Cochum and I enjoyed it, was like being in a Corona commercial.
They also have Mayan ruins there that are neat to see, and some decent shopping.

Do you book excursions/activities thru the cruise line or do you take the chance and book after you're there? I've heard good and bad about doing it both ways. I appreciate your time in a answering a couple of questions for me.

yeah I don't understand how you are suppose to really enjoy a caribbean island when you are only on it for about 10 hours. Fly to SXM, and you can do anything that could do on a cruise and can easy hop on a ferry on connector flight for day trips to neighboring islands.

Again, not everyone has several thousand dollars to spend on a vacation or wants to go through all of the hassle of setting all that up. Can you really not understand that?

I'm going on a cruise in April. I've been on NCL twice and loved it, but this time we are going on the Carnival Dream. I'm kind of apprehensive that the trip won't be as nice as I've heard mixed reviews on Carnival. We have a couple of small kids and I heard they were more geared towards that. I guess we'll see.

If you went on a disney cruise you will be pretty disappointed with carnival.

That is actually my biggest concern. Disney was so nice, great food, and lots of activities! I plan to leave the kids with the grandparents, this time! However, the posts on here have helped me kind of have realistic expectations of Carnival and other lines.

Carnival is fun! I went on my first cruise in December and the posters on this board had me horrified. Calling the Walmart of cruise lines. I admit, I was worried when I got in line to board the boat but the entire experience was a lot of fun. It is cheap, there is plenty of food and lots of booze. I love to gamble so the casino was always open and that is where I spent a lot of time. It really is a blast. I can't comment on Norwegian since I haven't sailed on that line but a friend went and loved it. I am going on two more cruises, one in April and one in June, both on the Dream. My cruise in December was on the Elation which is a smaller ship that does shorter cruises. I highly recommend it but to avoid the cheaper crowd, sail the 7 day Dream. The longer sailings usually get the older crowd and those with a little more money to spend. But even on the Elation, I didn't see any problems and it was during Christmas break while plenty of people were out of school. No drunk college kids falling down drunk that I saw.
We are going to Little French Key on our June cruise, can't wait. So glad to read others have liked it. You can only book that excursion directly through them so it is incredibly cheap compared to excursions booked through Carnival.
By the way, our cruise in June cost a grand total of $420 with $100 on board credit for 2 people in an extended balcony room. Basically, $320 bucks. I highly suggest gambling while on board, because we gambled last time we got this offer for such a cheap cruise. And no, we did not lose near enough that we paid full price for the cruise by factoring in our loss. Even if we did, so what, at least we got something for our money! When I lose at the casinos in town I leave with nothing and am lucky to get a free buffet offer.

Never been on Oasis. Been on the one class lower, on the Independence of the Seas (>4,000 passengers, in the top 5 biggest ships). We never had any availability issues for shows or dining. It can get crowded when trying to find chairs on a sea day, but it really wasn't that bad.

Saw Viking is about to do Mississippi River cruises up to michigan and back from NOLA in a couple years.. I want to do that that sounds like a cool 3 or 4 day weekend
