I will second this suggestion. I think it's one of the best ones out there now in regards to martial arts.
I don't think Dr. Kimm is still teaching, I think his son and some more senior instructors do the classes now. Dr. Kimm created Han Mu Do and is on many boards or advisory councils that I think take up most of his time.
I would be remised if I didn't mention who I wish I could suggest. At one time Ki Yoon in Baton Rouge was IMO the best there was, however, ALS took him several years ago. In regards to kids, in contrast to the OP, it was not uncommon for him to punish a misbehaving kid by spanking them with a bamboo cane. It was slotted so it was more for noise than anything but even in the ninety's it was odd to see someone doing this. The man was old school, and the world lost a great one. He was the one, and only instructor, no mass classes or instructors to make more money. RIP Master Ki Yoon

Most karate places these days are mcdojo's back in the older days hundreds of years ago, you learned to block first before you threw a punch
I'd suggest a Brazilian jiu jitsu place that also emphasizes judo and sambo. Basically Josh mancuso's place in Baton Rouge if it's convenient for you

In a perfect world I would definitely agree with this, although the fact is that the large majority of any physical altercation will find it's way to the ground very quickly. And, in that moment, the person who is trained in ground fighting will have a definitive edge against the person who does not.
Not to mention we actually teach wrestling and judo based takedowns and takedown defense along with ground grappling.

How about Judo? It's not as brutal as Krav Maga or Jiu-Jitsu, but it's very well structured and achievable. And, if the kids get good they can compete in the Olympics. Also, a simple 2 minute randori is one of the most physically demanding things I've ever done.

Oh and I plan to start my daughter in gymnastic later this summer
She'll be two in 3 weeks and loves climbing running and wants to do rolls so it'll be fun. I'm in the Tyler tx area so there are three mma/jiu jitsu schools that do allow them to start at age 3 so that will be next year

I did randori a couple of years ago with this guy Camille in Baton Rouge, he was part of the Cuban national team and was just starting after some time off. Never did I feel so exhausted and helpless in my life

As a owner of a martial arts academy, I truly think starting them earlier than 5 years old is a waste of your time and money. They simply won't get a lot out of it. I would recommend some basic tumbling classes until they reach 5 or older. I've had many requests to start them younger but I just can't do it with a good conscience.

I know the man I was learning judo from in Shreveport, master bear recommended age 6. It's a good age to develop the gross motor skills and the kids are more mature then.
I can always wait for that, but gymnastics for my daughter will build a great base of athleticism, motor skills, flexibility, etc so I'm more than happy to put her in that as long as the staff are professional

just make sure they awrays rook eye or you're no better than the other place.
