Yeah, I'm not religious but how is this even allowed? A lot of churches won't even perform weddings for non-members, much less baptisms.

This. A Confirmation, however, I've always seen as a "community event" during Mass, as you're being recognized by the congregation as a full-fledged Catholic.

I would bet you wife wants you to go so you can spend some time with her family. If they live out of state, then you probably don't see them outside of major holidays. I'm sure there is a direct flight to DFW, so just suck it up and spend the weekend there. The baptism doesn't take up much time, so try and plan something fun the other day/days you are there.

If you or your wife aren’t one the godparents don’t go. Buy a cheap cross or set of rosary beads and give it to them after. Could just get a hotel in Dallas and turn it into a weekend vacation though...go see a ball game one night and hit some bars/restaurants.

I know catholics do things differently but it makes far more sense to me to get baptised when it's a conscious choice you make, rather than being an infant and having water sprinkled on you.
More than a few Catholic Churches dunk or pour, not just sprinkle, as well.

Cray cray. Unless you are the God-Parents, there is no need to go.
Now, wife and I went to 2 in California because we turned them into mini vacations, but with out that reason, no way we would have went.

My first child was baptized in New Orleans. Second one in Tuscaloosa, third one in Atlanta.

I had my kid baptized in Baton Rouge, live in Houston, brother in law didn't make it, we all survived.
FYI, when you live out of town and spend 90% of events with the in laws, every once in a while you throw your family a bone.

I flew from Chicago to Louisiana for a baptism I didn’t want to be at. You are doing it for those family members, not the child. Use that to guide your decision making. My daughter will never remember that baptism On the north shore but I wasn’t willing to fall on my metaphorical sword to fight that battle with the in laws.
