You are supposed to take your shoe off, and put it on your hand, and holding out for the dog to bite. Not sure what you're supposed to do after they take hold of the shoe. I have heard that it takes very little pressure to pull their front legs apart and break their rib cage.
If it's a dogfight you are supposed to straddle them, and pick their front legs up by pulling their neck, or collar. Then you pin them between your knees, and insert a stick or stake in the back of their mouth and they will unlock their Jaw.

My dog got maced two weeks ago and I didn't even know it until my roommate pet him and rubbed his eyes. So....get stronger mace.

I worked for the census bureau back in 2000 going door to door.
I carried a stun gun with me. It was about the size of an iPhone. If a dog got near me in an aggressive manner I was going to send a few ten thousand volts through him. It was guaranteed to instantly put a dog helpless on the ground in a second.
Fortunately, I never had to do so. A few times dogs came at me in an aggressive attacking manner and all I had to do was fire the stun gun. It sprayed blue sparks and sounded like loud firecrackers. The dogs were scared to death and immediately turned and ran out of sight every single time. These included Rottweilers and Dobermans.

I've had two put bull run ins while walking my dogs. We won both in a dirty tag team type manner. My dogs bite while I kick. I really don't think I could win one on one. Those bastards look possessed when on the attack.

I've come across a few loose dog while running but never a pit bull. They took off running at me and when I noticed I became the aggressor and they have always stopped and backed down.
