best way to defend against or deter a pitbull attack?

Yes, I know pitbull attacks are discussed on the ot ad nauseum,
but what would you say would be the best way to deter or defend against a pit attack?
IF
you are not carrying a gun.
and
besides the obvious answer of avoiding the pit all together.
is pepper spray worthless?

I'm 90% sure I could land a kick onto a charging pit bulls head if I have a heads up and can wait on it.
Now, I don't think that'd kill it by any means, but maybe knock some energy out of it.
Then I'd maybe have a chance to wrap my left arm in my shirt and/or belt, let him have it to lock his jaw on, and I'd start eye gouging and throat ripping.
ETA:
Pit bulls run 25 mph at top end...that's a good bit slower than an average soccer ball kicked at you for reference.

When I used to ride touring bikes a spray with water worked well, at least better than swatting at them with my pump. That's all I got.

You are supposed to take your shoe off, and put it on your hand, and holding out for the dog to bite. Not sure what you're supposed to do after they take hold of the shoe. I have heard that it takes very little pressure to pull their front legs apart and break their rib cage.
If it's a dogfight you are supposed to straddle them, and pick their front legs up by pulling their neck, or collar. Then you pin them between your knees, and insert a stick or stake in the back of their mouth and they will unlock their Jaw.
