I ordered something prime on Wednesday morning of last week. It said at the time it was in stock but wouldn’t arrive til Tuesday. I don’t need it desperately so I was ok with it, but this is the case with a lot of prime items I order.

I have been getting things later than 2 days too. Many don't even state 2 days when checking out.
Now that much of the retail has gone out of business they will be able to get away with shittier and shittier customer service.

I ordered something recently and got it a day earlier than they said with Prime.

This has been a thing for a while. Long gone are the days when you order a prime item and it arrives two days later. My guess is that there are just too many damn people that have prime now.

It definitely isn't how it was 3 years ago, but this is an overstatement
I'd say I get 95% of Prime things 2 days from order. Once or twice a month I may get a wonky 2 day ship that is actually 3-4, but it tells you on the front end and it's usually over a weekend.

Why does one day shipping show tomorrow and 2 day is Friday? The holiday only counts toward 2 day?

I'd be willing to wager that it's because one day is likely never touched by the USPS and is handled solely by UPS, FedEx, etc., so they're always available, holiday or not.
2 day deliveries very often will have the heavy cross-country or regional logistical part of the delivery handled by the private delivery companies with a handover at your local post office so the USPS can take care of the last mile for delivery. Since the USPS might have to touch it, they'll count the federal holiday against 2 day on both sides of the holiday. The extra day before is, of course, because the delivery may fall on the USPS holiday. The extra day on orders delivered after the holiday is to allow the USPS to clear its backlog from the holiday. So, you can expect 3 day delivery on an item ordered on the holiday.
That still doesn't explain the 4 days from today to Friday on an in-stock item shipped from and sold by Amazon, though.

For orders fulfilled out of the Amazon warehouse, it generally is 2 days

Shipping has gotten ridiculous.
RARELY do I get something in 2 days. Not the way it was a couple of years ago. Much better before.
I order some pet items on Chewy.com. and yes, I do get that in 2 days.

I love the fact they try to deliver to my office when we are closed. -oh wait that is the USPS that Amazon thought was such a great idea to partner with.

I have Prime and rarely is this a problem, in the times it is a problem, the USPS is usually involved, which I think is more of an issue. I've never been screwed over the shipping times that I consider canceling Prime. Plus use Amazon TV so by the time I calculate all of the cost spread over all that I use, it's still a deal for me.
My biggest problem, is my lazy arse will decide I need/want something, I'll go on to the APP and buy something in 5 seconds a lot more than if I would have to go to store and buy.
