If you're speaking of the Springs in Florida the gators typically stay on the bank or a log sunning themself. I've paddled right by them (within 10 ft) and they are not concerned. They are probably use to seeing people, for whatever that's worth. Also it's not like the rivers have unexpected waves that would topple your yak.

I wouldn’t kayak in South Florida where crocs are present. An alligator isn’t going to bother you in a kayak unless you’re hanging sirloins off the side of it.

There is a canoe race in Texas from San Marcos down to Seadrift near Corpus, 270 miles. They paddle all night and have to portage a lot and they say you can see the red eyes of all the gators in the water.

Coetzee was swallowed whole by a massive crocodile. I read the article in Outside magazine years ago. His pals said he literally vanished in the blink of an eye.. scary shite but that’s how crocodiles death roll…
I used to kayak around the Tchefuncte/T-Rivers area with my daughter on the boat with me when she was a little tike.. most gators we ever counted in our presence was 12 :)

Swallowed whole probably isn't right, but a massive Nile Croc (much bigger than any American gators) straight up snatched him off the kayak and pulled him down in one motion. Hopefully for his sake he went quickly.

I remember reading that they drown the victims (obviously not usually humans) and stash the body for later.

As long as you are bigger they won't care.

Will depend if its an area where gators are routinely around people and if anyone has been feeding them.
Took my kayak to a small lake here in arkansas for the purpose of seeing one. Saw 3. One of them followed my kayak around. Never got aggressive but never left. I left promptly. Figure it was hoping i caught a fish or something.

I’ve canoed around a lot of a GA and N FL rivers. They usually are pretty DGAF. I have also inner tubes in some N FL rivers, and you usually find in the springs part of the river, but be more circumspect once it gets swampy. I have had far more close calls with moccasins. Also rattlesnakes are excellent swimmers.
