Coffee—hated anything with a trace of coffee. No mocha, no tiramisu, etc. Then at 50, started with iced caramel macchiatos and now require strong perked coffee with a little sugar and splash of cream.

Gin—did not like the medicinal taste. My friends got me started on French 75s. Now I have decided the juniper kind of makes gin a health tonic, and I drink G&Ts.

Honestly it never really changes in velocity of what all you get interested in. It's just always something else for me. About once a year. And it's spooky how once you get older you start to recognize what they were saying when you were younger was a lot more profound than you could possibly understand at the time.
Old folks know stuff you do not. You will. But you'd be well advised to listen early.

Broccoli, brussel sprouts, cabbage. I guess we're inately disgusted by the brassica family as children. I read that you have millions more tastebuds as a child, and as you age the tastebuds die off or become damaged.

Dang, I was going to pretty much post the same thing. Only difference with me is 40 year old women, I'm a bit younger, and I still don't like greens.
