First name that comes to mind was Sammy Knight.
Another I don’t think is mentioned enough is La’Roi Glover. Man was he good. I still can’t believe we let him walk for nothing. History repeated itself with T. Hendrickson. But true fans know those names.
Now a couple backers no one has mentioned or thought about, Keith Mitchell who was a probowler for us and Chris Clemons who had 13.5 sacks for us that one year.
And I’ll add one more, Robert ‘Pig’ Goff

Derland Moore - 1973 2nd rounder out of Oklahoma. Walked on and became an All American. Only made one Pro Bowl (in 1983, 10 years into his career), but was just a solid nose tackle for 12 years for the Saints. He was a good pass-rushing NT.
One memory I have of him is when he was either released or traded by the Saints to the Jets before the ‘86 season. Local news was interviewing him, and he started crying. Good dude. Thankfully he was able to experience the playoffs with the Jets that season then retired.
Fun Fact: He won the NFL arm-wrestling championship in ‘83 and ‘84.
Jim Wilks - 12th rd pick in the stellar ‘81 class that included George Rogers, Rickey Jackson, Hoby Brenner, Frank Warren, Hokie Gajan, and a few other guys who were starters at some point (Johnnie Poe, Russel Gary, Glen Redd, Louis Oubre). (This class along with the ‘86 class were the backbones of the Saints’ first run as a consistent winner.)
He played 13 years for the Saints and was a solid, reliable starter at DE on some of the Saints’ best ever defenses. He had 49 sacks, but was mostly a great run-stopping end in the Saints’ 3-4 defense. Sacks came from our OLBs, so he played his role perfectly.

Really stupid statement.
Dave Waymer played in 197 games in the NFL. Had 48 career interceptions. Made the pro bowl and was 2nd team All Pro. First in all time Saints interceptions.
Johnnie Poe played in 100 NFL games and had 17 career interceptions (including 7 in one year). 6th in all time Saints interceptions.
