My top 3 are Cover Me Up, Flying Over Water and Palmetto Rose. Since you already know Cover Me Up, I will also throw in Stockholm.
Also check out Alabama Pines (great song, and even better if you know the parts of the state he is talking about) and Codeine from his earlier albums with the 400 Unit.

I did t include turnpike because I thought we were doing current singer/songwriters.

I don't know that I'd classify TT as the group I revere or respect the most, but if I can go to one show to have a good time, I'd choose them. Even over REK, which is saying something for me.
But someone mentioned AA so I figured if that fits, Turnpike does.
