One band that hasn't been mentioned so far for quiet/loud transitions is System of a Down.

SOAD's best songs like Toxicity and Chop Suey have quiet, melodic portions, then just drop into loud, aggressive riffs and Serj's operatic voice.

Maybe not the most popular, but man, like 5 songs in one. Goes from flamenco style guitar, to smooth jazz, to Allman bros style blues/jazz fusion, to prog rock, to boogie style rock, to fusing them all together. Truly a musical ride.
