Auburn about 1992 or 1993. Lenny Kravitz opened for The Cult at Beard Eaves. This was before Are You Gonna Go My Way hit. Lenny was semi big after Always on the Run, but a lot of folks still didn't know who he was.
He absolutely blew The Cult off the stage. They could not follow that. We only stayed for some of The Cult and then left. Anyone at the show knew really big things were coming for Lenny.
Another one that was not as much was seeing Queensryche open for Def Leppard on the Hysteria tour. Def Leppard were in their prime and they were good but Queensryche was just as good and maybe a tad, just a little better.
I never got to see them back in the 1970's, but after 2112 came out, Rush was really not ready to be a headline act, but they started being headliners because no one wanted to follow them. It wasn't until Moving Pictures that they were selling out every arena they played.

I suspect Eddie Van Halen did that a lot when they first arrived on the scene.
ETA: not music but similar, when Pistol Pete was a freshman at LSU, freshmen weren't allowed to play on the varsity team. Since the freshman game was played before the varsity on the same night, the LSU fans would come to the freshman game to watch Pete and not stick around for the varsity games.

I was there to see Blues Traveler. It may have been that I was surprised how good they were, having barely heard of them. But they were awesome

I saw that tour and agree....The Cult were still great but Lenny in his prime was hard to follow
another was Guns and Roses opening for Aerosmith I want to say maybe 1989?

Alice in Chains opening for Guns n Roses on their reunion tour in 2016 at Soldier Field. AiC blew them away and it wasn't close.
Another no brainer was Letters to Cleo opening for Deep Blue Something (who?) in 1996.
Finally, Squeeze opening for Fleetwood Mac in 1990. Fleetwood Mac were fine, but Squeeze was just better...and were having more fun on stage.

I read in Mark Hoppus’s book that Blink-182 went on tour with Green Day and everyone wanted to see Blink on that tour. Blink would open but Green Day was the headliner.
He said that their set stole the energy and spotlight from Green Day. He also said Green Day never wanted to tour with them again after that.

Another one that comes to mind. While they didn’t say they played better than the headliners but I laughed when I read about it.
Tom Petty and The Heartbreakers actually opened for Kiss in 1976. Such a strange ticket lol. If I remember correctly Gene became a huge fan of TPHB.

The first time I saw KISS, Dr. Hook and the Medicine Show opened. I love those guys and thought it was hilarious. Saw KISS on the Dynasty tour in Pine Bluff, Ark., and Johnny Cougar opened.

One of the most well known known (or so I thought), was Prince absolutely embarrassing Rick James on a nightly basis when Prince opened for him around 1980.
I'm pretty sure Rick wanted to kill him halfway through the tour.

'78 Bay City (Michigan) Central High School football stadium.
Ted Nugent, Cheap Trick, Van Halen. All were good but Van Halen wowed.

while breaking certain opening act protocols,
can you elaborate on this? Genuinely curious.
What I read about Sedaka was that he was introducing people out in the audience, a priviledge I guess rightfully reserved for the headliner. The Carpenters let him use their orchestra too which isn't usually the case. And apparently he played Richard's piano and sort of beat the shite out it which pissed him off.
The poster who mentioned Kansas and Aerosmith was another one I thought of when I started this thread.
Steven Tyler had a habit of sabotaging opening acts who were going over too well by pulling cords out of the sound board. So Kansas set up a dummy board and when they were kicking arse on a show in their home state and Tyler started pulling cords nothing happened, pissing him off even more.

The Bottle Rockets played in Alexandria once. They were good, but the opener was one of the Gabe Daigle bands(Becky Sharp or The Myrtles) and they blew me away.

you could easily have just made up both of those bands and no one would be the wiser

The Bottle Rockets were pretty popular. They opened for Marshall Crenshaw for a long stint.

When I see this question asked first thing comes to mind always is BTO opening for Van Halen on the 5150 tour.
Not so much that BTO blew Halen away but BTO sounded outstanding, played their asses off and had a great time. I remember everyone around us saying the same thing.
Van Halen came out, blew the roof off but IMO, seeing Van Halen for every tour after I came of age, their sound was never great, always way too loud to make out much.
