Of more recent releases, this one comes to mind.

Going back a few years, I'd say Iron Man. Remember at the time, the Spiderman movies had passed, the Fantastic Four movies had come and gone, DC movies were a prior generation.
Iron Man was a rather obscure character and Robert Downey Jr was a washed up actor, and nobody knew what to expect other than some "superhero action".

Pitch Perfect. Only watched it because my wife wanted to and I knew it was filmed at LSU. Ended up really liking it.

When I was younger Amadeus. All I knew is it was about Mozart. Ended up being one of my favorites for a long time.

LOTR trilogy, particularly having never read the source material

Top Gun: Maverick was a LOT more enjoyable than I expected it to be

Someone mentioned About Time earlier - first time I saw that was on a flight and almost dismissed it, so glad I didn't

I liked Outlaw King with Chris Pine a lot, lot more than I expected to

Nobody with Bob Odenkirk blew me away because all I'd ever seen of him before was as Saul Goodman

That's a good one. Bridesmaids and Train wreck are also films I only watched because of my wife, but ended up really enjoying them.
