Most of them have already been mentioned. I'd add the director's cut of Kingdom of Heaven. Easily one of my favorite films of all time.

1. All Quiet on the Western Front - best story about war itself (WWI), and if you have never read the book you are missing one of the best books ever written, by a German veteran. Even the 1979 made for tv movie is excellently done.
2. Bridge On The River Kwai - a real bridge, based on a real person. Nominated for 8 Academy Awards and won seven: Best Picture, Best Actor, Best Director, Best Screenplay, Best Cinematography, Best Score, and Best Film Editing. Trivia - writer of the novel, Pierre Boulle' is probably better known for later writing Planet of the Apes.
3. To Hell And Back - certainly had the best technical advisor, star Audie Murphy, of whom it is the autobiographical account of his Medal of Honor actions.
Young folks in this thread - stuff like Inglorious Basterds and Fury is trash in comparison to real filmmaking.
Solely for entertainment purposes, not previously mentioned here - Kelly's Heroes.
Also one of my favorite films, perhaps not considered a "war" movie, Slaughterhouse Five (the bombing of Dresden is integral to the story).

One that I seldom see receive praise, is the WWI flyer movie The Blue Max (1966). Stars George Peppard, James Mason, Ursula Andress. Trailer on YouTube

Another film that has entertainment value is "Where Eagles Dare", starring Richard Burton and Clint Eastwood. The stunt double for Burton lost three teeth shooting the fight scene atop the cable car. Eastwood gets to grease a bunch of bad guys with a Thompson. Not suitable for Mt. Rushmore because purely fiction of course.
