And yet she was still horrible at it in 2 of the 3 movies where she had to act for more than a scene.
As for Sweeney, the issue would be her height. Heels would help but she’s only 5’ 3”; that’s going to take a lot of work to give off an Amazonian look.

You’re doing the same shite to her as Affleck and judging the entire performance off one line. people bend over backwards to find something to discredit his movies because they don’t like the serious tone and see Snyder as a bro / rightwing because of the masculine themes

Well first, calm down.
Second, "excellent" is giving her a lot of undue credit. If you're fine with her performance, okay; "excellent" is something I'd reserve for actual, praise worthy performances. That said, there are plenty of times where her delivery is stilted. She's good in the action scenes, where her physicality rules, but in line delivery she's just not that good.
As far as Snyder's take, I admit to not being a fan of his take specifically on Superman; I liked other aspects. I think he did good with most of the JL, which is why I prefer ZSJL WAY above BvS.
Snyder's Watchmen is one of the better superhero movies out there as his visual style was absolutely perfect for that comic. I just think he's better suited for characters who are already darker (Batman, Punisher, Daredevil, etc.) over those who are typically not (Superman, Spider-Man, Captain America, etc.)

Is there something I'm missing or is Sweeney just another nice woman with a large chest? Is there some performance that I didn't see that shows that she has the acting chops for the unending list of films that this board seems to think she would be perfect for?
Unfortunately, like Zendaya, she has become a lightning rod for the culture war. Righties feel like they have to glaze her. . ..lefties have to throw a tantrum at the mention of her.
She is a faaaaaar better actress than Gadot, but she isn't someone who can carry a franchise as big as WW.

The second movie was so all-time bad it ruined the franchise. She's not a great actress, but I think they can hide her deficiencies with the right script and direction. But, I think that movie was so bad, they'll just need to start from scratch with a new WW.
