Rey showed she was a competent combatant earlier in the movie just like it was alluded that Luke was a competent pilot before the Death Star attack in "A New Hope." I don't think it's that much different.
This. Plus, one would think she has had some training before she was abandoned.

he's not hiding so much as studying the remains of the first jedi temple and trying to decide if/when he can start again or if it's just better that he not train anyone else.

I see it like most have said in this thread. First off, Luke showed a lot of force skill before he ever got to Yoda by force grabbing his lightsaber while on Hoth, and turning off his targeting computer and using the force to aim his shot when he blew up the death star. Luke's problem was that he was overthinking things and doubting himself while training with Yoda, not to mention that his mind was on his friends. When Luke concentrated and blocked everything else out, he was able to use the force without training.
It was established that Rey was already very "athletic" from her savaging raid she did on the wrecked star destroyer, and a good fighter with her fight on the two guys that were twice her size that tried to steal BB8. But another thing that she proved early on in the film, that was contrary to what Luke was early on in his story, was that she was very self confident. The only time I remember her questioning herself was when she had the vision after touching the lightsaber (but that was because it scared the crap out if her). So when Kylo reminded her of what Maz told her about concentrating on letting the force move through her, she was able to allow the force to guide her actions.
Plus Kylo was shot in the side by a bowcaster (which is more powerful than a normal blaster), and had been hit in the arm by Finn with the lightsaber. So he was no where near 100% during that fight.

Not 30 minutes before in the movie Kylo Ren uses the force to completely freeze her and control her and carry her on his ship. She couldn't even move. And then just 30 minutes later she's more powerful than him?
Kylo Ren is not as powerful as he appears. Yes, he has raw power, which is why he beats Finn so easily, but his control over his emotions is terrible. Ren is pretty horribly trained at this point, and his lightsaber is proof enough of this. Rey has near complete control over her emotions, and that makes her mentally stronger than Ren, and she is able to overcome him in this way.

There's not much to add that hasn't already been mentioned. I'll just say that I had no issues with the way it turned out. Maybe it's because I liked Daisy Ridley so much in this role. She completely knocked it out of the park.

The worst part of that movie was Rey or Finn being able to defend themselves with the lightsaber against Kylo. Just ridiculous that they would be able to wield it in any way. Bash away.

I just re-watched Ep IV last night. One thing I noticed along these lines is that several times throughout the movie after Obi Won died is he kept telling Luke to trust the force and to trust his feelings.
The Force was a new concept to Luke. He had to be taught from scratch. Rey, had heard of the powers and what it could do so it would be easier for her to accept and trust once she discovered it was within her.

Rey, its not so hard to believe.
Finn, yes. He was a storm trooper with no hand to hand combat training. (I've never notices a storm trooper fighting with anything other than a blaster.)

It's certainly inferior. The saber does not have as much energy and is simply dangerous for its own user to yield. It's not nearly as clean as Anakin's or all the other lightsabers in the series. It's something that adds to his character and his frustration is that he hasn't figured out how to create a fully functioning lightsabers yet. Vader makes a point in Episode VI of being highly impressed he was able to forge a new lightsaber, and really there is pride from Vader in his son's ability to do it. Vader would laugh at Kylo's failed blade, and Kylo knows this as well. I'm sure that will turn into an obsession of his to get it in the next film, and I think he'll succeed by the end of Episode VIII.

Why did he get shot by Chewbacca? At the very beginning of the movie he completely froze the blaster bolt or whatever it's called in mid-air. Why didn't he do that when Chewbacca shot at him?
I just don't get how sometimes he seems like an unstoppable and omnipotent being and other times he seems pretty pedestrian.

Also... another thing I'd like to add about the lightsaber...
during the fight scene at the end, one of them swung the lightsaber and missed and hit a tree. It cut the tree right in half.
So howcome when they actually get hit with the lightsaber, it seems to just hurt them instead of completely killing them?
