So what was going on in that room that Rick's crew went through that looked like satanic rituals were being performed in? Are they cannibals, or satanists, or a combination of both?

Looked like they trusted some other people and lost some of their crew. The names on the floor, the candles, and writing on the wall made it look like a shrine of sorts.

Maybe something happened to turn them into cannibals? Started with the defectors or something, then just continued on. Could be off base though.

My wild arse guess to be long forgotten by October is that at some point, someone came in and wrecked their shite but the Terminus folks ended up winning in the end. After that, when anyone would show up, they'd just eat them to death, solving both the "how do we defend ourselves" and the "how do we eat" problems.

Basically what I said above. I don't think they care that much to remember those they have eaten but that room was a memorial to others they have lost from their group.
