I don't think she said to herself, this bitch stabbed me now I'm going to shoot her. I think when she got stabbed, her finger jerked and accidentally pulled the trigger. It was an involuntary reaction to getting stabbed. She sure didn't want to start a shooting war in a hallway.

ETA: Go back and watch that scene again. She was having an "oh shite" moment the minute she realized that she shot Beth.

Dawn was such an all over the place character. The "leave Noah" decision had a pretty good chance of resulting in a blood bath. Actually, only two people dead as a result of that was actually one of the least violent outcomes.
