I'd say Carrey as The Riddler.

Ace Ventura was pitched to Rick Moranis and David Alan Grier. When Carrey took the part he completely rewrote the movie to showcase his improv.
The Grinch will always be Boris Karloff to me.

The Riddler was an established character who had previously been best portrayed by an extremely physical comedian/impressionist (Frank Gorshin). The no-brainer casting was thought to be Robin Williams until Carrey came on the scene with his insane body language. The timing was perfect with The Riddler coming up in the villain rotation just as Carrey was hitting his peak.

And Ian McKellan wasn't THAT well known by American audiences when he was cast. He had appeared in Richard III as well as Gods and Monsters, but aside from those two films I don't think anyone truly knew who he was here in the States when X-Men was released. Obviously X-Men helped introduce us to him before The Lord of the Rings premiered the very next year.

Carrey was a horrible choice for the Riddler. Obvious maybe in the sense that the studio just couldn't help themselves, but that was a horribly miscast role for Carrey.

Jackman has been around for years.
and recognized as talented on stage and screen.
Marvel Universe fans may not have known him previously, I guess.

Maybe too old by then though. And not sure if Danzig can act.

I think there must be countless stocky actors who could do wolverine. Seems like an easy role to cast. Short, muscular, preferable ruddy and hairy, gruff voice and can do a bad attitude.
