No children with him. This Benjen is the closest we will get to Coldhands (most likely) though he is not Coldhands (no elk, no blue eyes, etc)

Yeah, I am puzzled by who Coldhands will be in the books. GRRM has said it is not Benjen, and the Children say that the walkers killed Coldhands "long ago." Not sure how long, but time is pointless now haha

But it is clearly a different character from the books. GRRM has straight up said Coldhands isn't Benjen, and the details on Coldhands (killed "long ago") don't match Benjen.
This is just expedient combining of characters by the show.

Did he? Im pretty sure GRRM is mad that so many people have figured out his twists that he may change them just because of that. That may be why its taken so long for these last 2 books.

As far as the CoF go, I think they stay north for their fear of men and they don't think the Others will find them in their small numbers and protection from them.
As far as the Others waking, I'm not sure how to take any of the "CoF created the Night King" stuff. You hear that the Others have been around thousands of years and the great wars of the north, you know how long the wall has been up and so you know that the Others have been around thousands of years. Yet they created the Night King but left him alive when they defeated the Others thousands of years ago, a creature that can raise a dead army and change men to Others. Not exactly someone you leave alive.
In the books, you get a sense that 3ER wants something more from Bran than for him to takeover for him. There is a theory out there that 3ER even warns bodies when one gets old enough and another can come into play, it even seems plausible with 3ER making the comment that it is time for Bran to become him but he isn't ready. Almost as if Bran being paralyzed would let him stay in the roots long enough to become part of the network like Bloodraven did. It would be interesting to find out that Bloodraven called the Night King back a few years previous for some odd reason.

Well it was long theorized that the Green Seer scope of sight was based around where the weirwoods are located. Similarly most characters seem to believe that the Old Gods of the Forest's power is tied to the weirwoods. That is part of the concern with the Starks going south of the Neck.... no weirwoods for their gods to watch over them.
The fact that Bran sees KL and ToJ (definitely no weirwoods) challenges that theory.

I have wondered this sometimes, but it seems like there are things he definitely wants to occur (he mentioned he has known the Hodor origin story since the 90s). I am sure there are some tweaks he has made, but it seems like book Coldhands is not Benjen.

I don't think he is altering anything on this. The original details on Coldhands don't match Benjen and never did.
