Correct. Even in the movie, it was supposed to be the Caribbean island of "San Monique".
Conversely, this scene which is supposedly in Louisiana at the gator farm (right before the boat chase) was clearly NOT filmed here (and probably in Jamaica)-- note the mountains/hills in the background:
