Blazing Saddles is better.
But Airplane! is close.

IIRC, my introduction to BS was when I was a kid, so mid-late 80s. Me and my dad were at one of his friends' houses and their kid was my age-ish and he was watching this movie on TV and laughing his arse off. So I went over there and he said "watch this" and it was the beans/fart scene. And I just about died laughing. We kept rewinding it over and over and I was crying laughing every time.

Blazing Saddles by 4 furlongs.
Next up for me would be another Mel Brooks classic in "Young Frankenstein".
Sorry, but "Airplane is pretty far down my list of comedies.

Mel Brooks is my jam, so Blazing Saddles.
One of my favorite scenes in Blazing Saddles is when the old white woman comes back to apologize to the sheriff.

I saw both of these movies at a very young age and then later in age, and later, and later, up until now at age 40...
i must say Airplane is more clever comedy and holds up, even with dated Disco scene and whatnot. I just don't laugh as hard as the farting bean scene as I did the first 20 years of my life or other things in Blazing Saddles, but I can laugh at almost every single joke in Airplane no matter what.
Just my opinion.

Blazing Saddles is better and funnier
But they’re both legendary comedies.

I think Blazing Saddles is funnier, although Airplane is great.
I also like History of the World Part I.

For me it's Airplane. I like Blazing Saddles, but I don't find it as hilarious as some. I don't find myself laughing out loud while watching it or find myself still quoting scenes from it like I do with Airplane.
One movie that I'd put up their against Airplane is Princess Bride. That one works on a couple of different levels and one my grown kids and I will still start quoting in reference to random situations.

Princess Bride is in the conversation for perfect movie.

Airplane is a silly movie for silly people.
Blazing Saddles may be the best comedies ever made.
Someone may try an Airplane remake one day.
Never gonna happen with saddles lol

I’m 70 and have seen so very many absolutely funny movies. You really have to rank them in their genres and eras, etc. because some of the old “screwball” comedies of yore were great. If you haven’t seen any, please watch some Marx Brothers movies — way ahead of their time.
But for shear hilarity and laugh-a-minute, satirical comedies that left you with so many memorable lines, I say:
1 Blazing Saddles
2 Airplane
3 Top Secret
4 History of the World
5 Young Frankenstein

Agreed. They just seemed to capture everything just right.

I think the edginess of Blazing Saddles puts it over the more goofiness of Airplane
Nail, meet head.
This is really what the difference between the two boils down to: preference. Those who like a solid parody movie more will prefer Blazing Saddles, those who prefer non-stop quips at break-neck speed will be more likely to go for Airplane.
For the vast, VAST majority of people, you simply cannot go wrong with either.
