The best character arc from POS to Hero in any media is St. Paul in the book of Acts.

Is it? Paul was instrumental in Romanizing the Christian faith. There’s a lot of wisdom in the Epistles of Paul that somewhat contradict teachings in earlier portions of the Bible. These factors lead many to speculate that Paul was a double-agent sent to infiltrate the burgeoning Christian movement and co-opt it to eventually be taken over by Rome, which is eventually what happened. The bulk of the Christian faith eventually became an arm of the Empire which continued to maintain Imperial traditions and political power after the rest of the Empire officially collapsed. Yet, despite this, the Pope filled the void holding immense power and influence over the Kings of Europe that ruled over the former Empire.
One could also argue that absent this Romanization, Christianity never would have replaced Paganism as the religion of choice for Roman citizens, but it is unquestionable that Paul greatly altered the trajectory and teachings of the early church.

At first he is a Nazi who sees the jews purely as an opportunity to make money and as cheap labor he can exploit but then starts saving more and more lives until the end when he laments not being able to save more.
But since dragon ball was already brought up, I always respected Piccolo's arc. Dude was made out of pure evil but goes on to save the son of his biggest rival... Hell Dragon Ball is full of assholes turned good...hell the first episode starts with the main character getting shot in the head by what would become his main travel companion.

Snape is a clear winner here too, you go maybe half the series before realizing he's actually a hero.
Darth Vader, for those old enough to remember the original trilogy. He was the original terrifying bad guy, the one everyone feared. Cross between a sorcerer and Gestapo.

These are probably top 3.
Vader being the most interesting one. For me I saw the original and the image of Vader was evil but as we learned over time he changed. For my kids who have seen them in order they never saw Vader as evil. They sympathized with a kid that lost his mother and felt empathy for him always expecting him to return to the good.

How about Han Solo in Star Wars? Pretty selfish throughout most of the film, leaves with his money before Yavin, and then shows up at the last second at the Death Star to save Luke’s arse.
