Aren’t most sporting events, in general, this way?

Yep.
Gambling is what moves the needle on college football and college basketball. It's not there on baseball yet.
And while I don't think it's close to being a national sport, the fanbase is getting bigger.
The talent pool is increasing at a very quick rate with the shortening of the MLB draft and the cutting of two MILB levels. Fringe prospects are more inclined to go to and stay in school longer. The very very top guys will still sign out of high school but overall, that number is shrinking.

roger Clemens, randy Johnson, frank Thomas, Barry bonds, max scherzer, all played college baseball just off the top of my head.
All these guys are the exception and not the rule.
The best conference in college baseball
(SEC) had produced a grand total of one
MLB HOF'er (Frank Thomas)

The SEC's dominance over the sport is pretty recent as far as baseball timelines go.
The HOF works on a longer timeframe.
ETA: Which is to say your argument is either disingenuous or ignorant.

There are only 239 total players in the HOF. The SEC didn’t even start taking baseball seriously until the 1980s, and it was only a few schools at that point. The SEC only established itself as THE conference in the last 20-25 years. There aren’t enough HOF eligible players for this to even be a relevant argument

will watch LSU every time they are on my t.v. for college baseball. But I'm probably not going to watch any other college baseball game that does not include LSU, unless it has a bearing in some way on LSU, like I watched the last inning of the Indiana - KY game yesterday. Otherwise not a pitch.
Which is fine. That’s more than enough games every season

maybe in 2000 or even 2010, but now there’s way more major prospects going the collegiate route.
College has become the minor leagues for all leagues now.
Why invest, when boosters will gladly pay the way for Joe Nevergonnagotoclass to attend university for a couple years and develop.

Softball gets a lot of airtime (I don't know for certain that it's more) because it fits neatly into a two hour broadcast window.

No it doesn't.

you’re Softball team was unranked all year and played as many televised regular season games as your top 15 Baseball team.
LSU was #1 most of the year and played 9 games on actual TV vs the Softball team who played 11.

The sec seems to have a decent amount of good players. But yeah i don't really start paying attention till the postseason.

I was in Chicago for a Cubs series back in 2009 about a week or two after LSU just won the CWS. I wore my LSU gear and I had a couple of people come up to me and say - don't y'all have a pretty good baseball team?
They had a vague notion that LSU had some tradition in baseball but it was just that - vague, they knew no details. I said yes - as a matter of fact we just won the national title in baseball about a week ago. They had no idea. These are people in Wrigleyville there for a baseball game, not tourists at the Museum.
Irony of it, the two people that asked me were both from the South and not Chicago.

I bet there are lots of people in the Northeast and East Coast that wonder this about lacrosse.

No it doesn't. Games average about 2:30 and I'm hearing they're about to get a pitch clock too. The main reason softball games are shorter at this point is its 7 innings instead of 9 and usually less pitching changes (though that's rapidly changing).
