so players should be able to sign LOI and go elsewhere if they change their mind with out sitting out or any other penalties?

I think my comment flew over your head. You said that since a coach can walk away from a contract, then a player should be able to walk away from a LOI.
The answer is that both actions have consequences. A coach would need to pay a breakage fee or liquidated damages. A player would need to sit out a year.
So, yeah, there are consequences to signing a contract.

Nothing flew over my head. The coach leaves for a better opportunity and the new employer pays the fee, assuming there is one. The player doesn't have that luxury. The coach doesn't have to sit out. And the penalty the coach may or may not have to pay is negotiated. Again, the player doesn't have the ability to negotiate his penalty. Not all contracts have a penalty.

"Eddie Vanderdoes will not be attending the University of Notre Dame. We did not release him from his national letter of intent in order to protect the integrity of that very important program, but we have worked with the Vanderdoes family so that Eddie can continue his education this fall at a school closer to his home. We understand Eddie’s interest in remaining closer to his family and wish him well."
