Beer Simmered Grilled Brats

Put some brats to simmer in a beer and butter bath then grilled them.



Of course I needed a cold beer grilling over that hot grill.



Almost time to take them off the grill.



Served with some homemade mustard, homemade pickles and a dill potato salad I threw together this afternoon.

Do you pierce them before throwing them into the bath?

Looks great. Big fan of beer brats.

I will say, I was originally taught to grill first and then soak in beer. I’m going to give your method a go next time.

The way I do them is to get them cooked through and then grill them to char/crisp up the casing. If you notice in the second picture the first brat that was done I put back into the pan with the onions. I usually put some back in the beer bath and some I keep dry for anyone who just wants one without or without the onions.

These were great but I wish I could've had pretzel hot dog buns. Couldn't find them anywhere around here. Pretzel burger buns but none for dogs.

You did those right. Just the way my friend used to do them back in the day. Great job, and now that I saw these pictures, I might have to buy some brats myself.

I've always boiled them in beer, with onions, then put all that on an upper grill rack to stay warm. When I wanted to serve one, I would crisp it up on the lower rack to get a char.

And now I want one.

I love it, this year i made 50lbs of venison brats, I do the same thing just use the Sam Adams Oktoberfest, it seems to be a little darker, and gives the onions a different sweetness.

Yeah, I used an Abita Pecan Ale.

Abita Pecan Ale

Also sprinkled the brats with some Pit Boss Smoky Salt & Cracked Pepper. It has a light hickory smoke flavor.

Yeah I have to imagine that the brats are much juicier the way you do them. (Come to find out they call this the Wisconsin beer brat way). I almost feel dumb for not thinking of doing it this way.

Why waste a good beer? I usually just use a crappy Mich Golden or Bud Light that some guest brought over at some time and has been sitting in the fridge. Do you think the brats will carry the beer that much?

Looks delicious but next time try grilling them first and then sautéing them in beer and onions.

This is the correct way. Grill your burgers and brats then let them hang out together in a beer sauna. I’d go to sportsmen’s club meetings with my dad and Nescos filled with both were pretty standard. In winter my mom would skip the grilling part and’s just boil them in beer, butter, and onions.

I do, it soaks up the flavor and the moisture evaporates when you grill them so they're not soggy.
