First video game that blew your mind

What's the first one where you just stopped and said, "Well damn."
I think for me it was FFII, because it was the first game I got that had 16-bit sound. Prior to that, all the games I had played were in 8-bit sound - and FFII took full advantage of that improvement in quality.
Oh, and want to add Everquest - first time playing in such a massive 3d world, with other players. Hell, I played a bard, got high enough to get the movement boost, and just ran around exploring.

The original Zelda for the NES. Was the first game that felt like a really big adventure. Was mind blowing to play a game that was clearly meant to take days, if not weeks to complete and to be part of a big world.
All video games up to that point had been designed around very short or repetitive gameplay loops, mostly as a function of the limited storage capacity.

Super Mario 64 or Goldeneye 64
Probably more Super Mario, seeing all of that in 3D was pretty awesome as a kid.

I've been playing games since the very early 90s on the NES (born in '87). The first one I can remember that really "blew my mind" was Tony Hawk's Pro Skater in 1999.

It was probably Gauntlet (arcade).
Just the scope of the game, 4 players, the size of the cabinet, etc.

Sonic 3D. After years of platforming in left/right and up/down on Genesis, NES, SNES, and gameboy games, I was suddenly able to go back and forth. Blew my mind.

Oblivion.
Didn’t know a game could be so large in scope that you could walk around like you’re actually in a different world

I played StarFox 64 at a friends house back in '97; It was the first time I had seen a real 3d game.

Dragon's Lair arcade game. It was literally a cartoon that you could play. Too bad the gameplay itself was awful.

Super Mario 64 comes to mind. I don’t think any game will ever top how amazing it was to see Mario jump from 2D to 3D that seamlessly.
And Majora’s Mask also blew my mind. First Zelda game I played so it spoiled me. I really wish they’d do a reimagining of it with BotW’s game engine.

I just remember going from Super Mario World to Mario 64 and being mind blown.
