Enslaved. fricking soundtrack is legit too.
You can get it for $10 new now. If you haven't played it I highly recommend you do. Full motion capture graphics with Andy Serkis (Gollum) as the lead character.

Deus Ex: Human Revolution was one of the better single-player games I've played. Not being privy to all of the twists and turns on my first playthrough kept me guessing and the gameplay was awesome.
Great choice.
Ocarina of Time is so nostalgic.
FFX is a classic

I think people were more talking about storyline. Yeah, Goldeneye was fun, but the story was kind of lost in the game. Also, the multiplayer far outshined the campaign.
Ocarina of Time
Majoras Mask
Mass Effect 1-3 (minus the god-child bits at the end)
Darksiders
Starcraft and SCII
Warcraft III
Tales of Symphonia
Portal and Portal 2 (surprised these haven't been said yet)

Super Mario RPG: Legend of the Seven Stars. It's made by SquareEnix, think Super Mario meets Final Fantasy. Legit.
