Here are some of my submissions.

Final Fantasy VI: Dancing Mad
Final Fantasy VII: One Winged Angel
Super Mario 64: Ultimate Bowser
The Legend of Zelda: Ocarina of Time: Ganon
Fire Emblem Three Houses: Apex of the World

What are your choices?

EDIT: fricked up the Dancing Mad one. Now corrected

The definitive list is:

1. One Winged Angel Rebirth [FF7:R]
2. God Shattering Star [Fire Emblem: Three Houses]
3. Vs. Zanza [Xenoblade Chronicles]
4. Vs. Galeem [Super Smash Bros. Ultimate]
5. Pokémon Red and Blue - Champion Blue

Honestly you’re probably gonna see a lot of Square Enix and Capcom in this thread. They put money in their OSTs like it’s the 16th century Catholic Church.

Secret of Mana: Meridian Dance
The final battle against the Mana Beast. I like this one more than some of the others mentioned because it incorporates some of the earlier musical themes from the game and really makes the song feel like part of the story.

Super Castlevania IV: Dracula Battle / Theme of Simon Belmont
The atmosphere of the first track after defeating the sub bosses, walking down the corridor with the torches coming alight, and the first part of the battle with Dracula is good, but it gets great when Simon's Theme kicks in when you start to get the upper hand and Dracula also steps up his attacks.

Arcana: Battle with Rimsala
This theme takes the opening of the main battle theme and then opens up into a much more elaborate track. I'm a big fan of the driving bass of many SNES tracks, and this one delivers there.

Katamari Damacy: Katamari of Love
This game doesn't have a "boss" to beat (other than perhaps your terrible father), but this song serves as both the final level, a race against time, and the ending credits all rolled up into one. Very cathartic after racing to collect every little thing and make an adequate moon.

Considering the audio hardware was some of the most limited ever, the Pokémon Red and Blue Champion theme is pretty phenomenal.

Dear God, if I remember correctly, that boss fight in FFIV took the better part of an hour.

Ace Combat Zero: Zero
Puyo Puyo: Final Boss Satan (We Americans will recognize this track from the Two Player mode of Dr. Robotnik's Mean Bean Machine)
Sonic Mania: Egg Reverie
Any final boss from Undertale. I prefer Hopes and Dreams since it incorporates many of the leitmotifs that you've heard throughout the game.

Can't believe no one mentioned the greatest boss fight song ever.

MGS3 - Snake Eater

Only bad part is that you kinda had to stall the fight out to get it

It's actually the second to last, final boss fight before Yu Yevon, but the aeon Jecht fight music in Final Fantasy X is incredibly fitting. I'm a metalhead though

FFX Braska's Final Aeon

For any other metalheads/Final Fantast buffs here, this guy does a stellar guitar cover of "One Winged Angel"...
