You've Been Making Kraft Mac and Cheese All Wrong

Oh well, a day late and a dollar short for the Cheese Challenge. My luck lately.

Supposedly, there's a viral video on Tik Tok that gives the better technique. You put just enough water to cover the macaroni and add the cheese powder and butter.

Only when most of the water/cheese mix is absorbed do you add the milk and stir, then cut off the fire.

It supposedly comes out creamier and you don't have to pour off the water.

In the video the girl uses cream instead of milk and also adds cheese.

Huh. That's how my dad always made it growing up, and I always thought it was too runny. I guess maybe he used too much water or something.

One of my great lessons in life was when I encountered store brand mac and cheese at the Piggly Wiggly on Burbank for 11 cents a box. What a bargain! I grabbed three.

Made the first box, and it was horrific. I threw it out, along with the other two boxes. Stick with Kraft.

Don’t add anywhere near the amount of butter the instructions on the box call for.

When we strain our noodles in the pot we add our butter milk and cheese powder. Stir it all to a liquid then add the noodles back in.

Makes the powder not clump up as much.

Take the butter and milk and heat it up in the microwave while the noodles boil. Mix together and then add in the cheese powder, stir this all together and then mix in to the drained noodles.

This what I've been doing with all of my pastas lately. I think I saw it on Good Eats. Not rinsing the pasta helps make the sauce stick.

We make mac and cheese out of Kraft singles. It’s just better that way.

Boil elbows, drain and dry…add milk, butter, and a bunch of singles…cook it down a bit. Add white pepper and salt.
