i think tacos would probably be one of the easiest. besides the meat, most of the ingredients dont need any cooking or tweaking. just concentrate on getting the meats right

Korean BBQ...3 lettuce cups with your choice of short ribs, pork belly or shrimp served with quality Banchan.
You could also have Bibimbap Bulgogi Yaki mandu etc. all quick and easy. During the winter you could have a variety of Korean soups and stews.
You could make a killing.

A concept based on Frito Pie. Bags of chips topped with warm meat based sauces garnished with fresh vegetables & dairy products.
There are infinite combinations with all of the different types of bagged "chips" & the wide variety of chip flavors available.

Chicken Parmesan
Eggplant Parmesan for hippie vegan millenials who love food trucks

These could be made in three minutes or less with a hot grill, toaster and pre cooked fixins.

They'd all come with cheese. "Smothered" would be extra- grilled mushrooms, green bell peppers and onions.

smoked/braised pork shoulder tacos, choice of green chile or red chile sauce, fresh pico de gallo, side of slaw. All these ingredients are cheap and can be made in large quantities,

I would probably do a sandwich shop specializing in pulled pork.

I would have an asian pulled pork
Bbq pulled pork with slaw
Cuban
Cajun turkey
And a couple innovative sides to draw people in.

Wings.

Have classics done right and some creative sauce options (recently did a Thai pepper jelly wing with a peanut dipping sauce. Thai pb&j!)

And round it out with some sides and variety of deliveries (maybe some tacos, for instance)
