i think tacos would probably be one of the easiest. besides the meat, most of the ingredients dont need any cooking or tweaking. just concentrate on getting the meats right

Korean BBQ...3 lettuce cups with your choice of short ribs, pork belly or shrimp served with quality Banchan.
You could also have Bibimbap Bulgogi Yaki mandu etc. all quick and easy. During the winter you could have a variety of Korean soups and stews.
You could make a killing.

A concept based on Frito Pie. Bags of chips topped with warm meat based sauces garnished with fresh vegetables & dairy products.

smoked/braised pork shoulder tacos, choice of green chile or red chile sauce, fresh pico de gallo, side of slaw. All these ingredients are cheap and can be made in large quantities,

Have classics done right and some creative sauce options (recently did a Thai pepper jelly wing with a peanut dipping sauce. Thai pb&j!)
